Homemade Honey Nut Granola
Crunchy, lightly sweetened with honey, this delicious granola will be sure to give you the nutrition you need to satisfy you at any time of the day. Granola has been known to improve digestion, promote weight loss, reduce cholesterol levels and improve energy levels among many other health benefits.
If you have never tried homemade granola you are in for a treat! It is not only super easy to make, but tastes dramatically better then store bought and is way more economical on your wallet!
Because we have a large family (count 6 kids) we are always trying to make things in bulk that will last a long time… and feed a lot of mouths! I have been making this granola recipe since my youngest was little. (he’s 13 now!)
Honey is our go to sweetener around here (obviously)! We go through a crazy amount each week. We are a little spoiled! This granola has just the right amount of sweetness from the honey and nuttiness from the almonds and coconut. I’m sure it will become a staple in your house as well!
Honey Nut Granola

You will need :
1 Pot
Mixing bowl
2 Pans
Measuring Cup
Aluminum Foil ( to prevent having to clean sticky pans)
Whisk
Mixing Spoon
Ingredients
Makes about 6 cups. Shelf life about 2 weeks.
4 1/2 Cups Organic Old Fashioned Rolled Oats
3/4 Cup. Organic Virgin( unrefined) Coconut Oil
1 Cup. Organic Coconut flakes
1/2 Cup. Pecans( or preferred nut)
1/2 Cup. Almonds
1 Tbs. Vanilla
1 Tbs. Cinnamon
Instructions
Preheat oven to 325
Melt coconut oil in pot.
Pour coconut oil, vanilla, cinnamon, and honey into mixing bowl and whisk until combined.
Add in oatmeal, nuts and coconut flakes and mix until everything is incorporated.
Spread mixture between 2 pans covered with aluminium foil.
Cook for 15 to 20 minutes until golden brown. Take out and mix half way between baking.
Pour into glass container and eat with milk, yogurt, fresh or dried fruit. Store in cool, dry place.
